Prep for Smoked Ribeye Cigar

San Diego Personal Chef Yoann is preparing for a special event on Wednesday. The wonton cigar shape will be used as the outer shell for the Smoked Ribeye Cigar. The scallion is being prepared for 24 hour dehydration prior to being turned into hash that will compliment the dish.
